David Dennison

David Dennison runs a vineyard and orchard in County Waterford. David is the founder of Viking Irish Drinks, producing craft wine and cider on his farm in Waterford. The 1-hectare vineyard, which was planted in 2010, provides red and white grapes for wine. There is 2.2 hectares of cider apple trees to produce craft cider. They also produce liqueurs and are now experimenting with alcohol-free beverages. They grow blackcurrants and blackberries on the land, as well as keeping some hives of honeybees. The entire system is managed with huge sensitivity towards nature and wildlife on the land.

A Sommelier by profession, David has over 35 years’ experience in the food and drinks industry. In addition, David has represented Ireland at World and European Sommelier competitions, and he is a holder of a Wine & Spirit Education Trust Diploma (WSET) and has previously held teaching positions for the afore-mentioned organisation.

Sustainability is at the fore of Viking Irish Drinks, as all production is organically based.

In 2024, Viking Irish Drinks earned gold, silver, and bronze awards for various products at the Blas na hÉireann awards and the prestigious Best in Waterford title. Additionally, Viking Irish Drinks was honoured as a Farming for Nature Ambassador in 2022.
